Melting Sugar Cookies *~* Zartschmelzendes Buttergebäck



One of the best Sugar Cookies I have eaten in a long time  :-)

I found the recipe last year browsing the web  - what a lovely easy recipe!

If you like to try a melting soft sugar cookie this year - you should use this recipe!

Soft Sugar Cookies


1-1/2 cups unsalted butter, room temperature

1 teaspoon baking power
1/2 teaspoon salt
1 2/3 cups sugar
2 Eggs, large, room temperature
1 tablespoon vanilla extract

1/4 teaspoon almond extract or lemon extract
4 1/4 cups AP flour
Decor: sprinkles, sanding sugars or other decorations

Measure flour in a medium bowl and set aside

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, baking powder, and salt together on medium speed until fluffy, about 3-4 minutes. Scrape down the sides of the bowl and add the eggs one at a time beating well after each. Add the vanilla and lemon or almond extract ( if using) and beat again to incorporate.

Turn the mixer down to low and add half flour, mixing until barely combined, add the rest of flour and continue mixing until just combined. If the dough still seems too soft, you can add a bit flour until it is a better consistency for rolling.

Divide the dough into 3 balls. Roll each portion out onto a piece of parchment or wax paper to a just shy of 1/4' thickness. Stack the three pieces (paper included) onto a baking sheet and refrigerate for about 45 minutes.

Wen ready bake. Preheat the oven to 350°F.

Remove one of the dough pieces from the fridge at a time and cut shapes with whatever cookie cutter you prefer. Transfer to cut to a prepared baking sheet. Re-roll the remaining dough and continues cutting until finished.

Before baking, you can apply sanding sugar or other decor. There are great recipes for glaze or royal icing.

Bake for about 8-11 minutes, until very light colored on top and around the edges, rotating the baking sheet halfway through. Allow to cool on a wire rack for a few minutes before removing the cookies from the pan and allow them to cool completely. Store in  air tight tin.



Zartschmelzendes Buttergebäck

1-1/2 Tassen Butter, Zimmertemperatur
1 2/3 Tasse Zucker
1 TL Backpulver
1/2 TL Salz
2 Eier, L, Zimmertemperatur
1 EL Vanille
1/4 TL Mandelaroma oder Zitronenaroma
1 1/4 Tassen Mehl
Dekor: Streusel, Perlchen oder bunte Zucker

In einer Schüssel Mehl abmessen und zur Seite stellen

In einer weiteren Schüssel Butter, Zucker, Backpulver, Salz auf mittlerer Stufe fluffig schlagen mit einem Handmixer ca 3-4 Minuten. Die Seiten mit einem Spatel sauber kratzen und die Vanille sowie Bittermandelaroma oder Zitronenaroma beifügen und vermische.

Den Mixer auf niedrigste Stufe stellen und langsam das Mehl hinzufügen und vermishen bis der Teig gerade so zusammenhält - sollte der Teig zu weich sein . noch etwas Mehl unterarbeiten bis es eine seidige Konsistenz hat.

In 3 Kugeln teilen und dann ausrollen auf einem Stück Backpapier und dann im Kühlschrank für 1 Stunde auskühlen lassen.

Den Ofen auf 160°C vorheizen und den Teig aus dem Ofen nehmen und mit Ausstechern der eigenen Wahl ausstechen und auf ein vorbereitetes Backblech legen. Die Kekse 8-11 Minute backen, bis sie ganz zart goldfarben sind und unbedingt das Backblech nach 4 Minuten drehen! Komplett auskühlen lassen und dekorieren! In einer Luftdichten Keksdose aufbewahren. Schmecken nicht nur in der Weihnachtszeit!!
