Garlic - Parmesan Roasted Cauliflower (whole head)
This dish is one of the trends on Tiktok - its so simple and really works well - i had to try it . the garlic parmesan cauliflower roasted in the oven :-) Let's go this is how its done
1 small head of caulifower, rinsed and leaves cut away (be careful we need the whole head intact)
Kosher salt
Pepper
Paprika
1 bulb of garlic
1/2 cup good native olive oil
1 cup of freshly grated Parmigiano Reggiano
Boil the cleaned cauliflower for 10 min in boiling salty water. Preheat the oven to
180°C/350° F.
Drain the cauliflower and place it
in a casserole dish and brush the head with olive oil all around even
the bottom and sprinkle with salt pepper and paprika...
Cut the top off the bulb of garlic like in image beside and place in a piece of tin foil, drizzle with a bit of oil and salt and close the tin foil all around and put it in the casserole dish.
Place casserole in the oven and bake for 50 min or till garlic is roasted like in the image and soft. Take out the garlic, squeeze the soft bulbs into a bowl and puree them with olive oil and add a bitt of pepper, paprika and salt. Brush the whole cauliflower head again also the bottom and sprinkle with parmesan and if you like some fine bread crumbs with italian herbs - i just used the parmesan. Put it under the broiler for 50 seconds - dont burn the cheese just roast it golden brown...
This makes a very nice side dish
