Ingredients

1 small head of cauliflower, rinsed and trimmed (keep the head intact)

1 bulb garlic

½ cup (120 ml) good olive oil

1 cup (100 g) freshly grated Parmigiano-Reggiano
Instructions

Preheat the oven:
Set the oven to 350°F (180°C). Bring a large pot of salted water to a boil. -
Parboil the cauliflower:
Gently lower the cauliflower head into the boiling water and cook for 10 minutes. Drain carefully and place it in a baking dish. -
Prepare the garlic:
Slice the top off the garlic bulb to expose the cloves. Place it on a piece of foil, drizzle with a little olive oil, sprinkle with salt, wrap tightly, and set it beside the cauliflower in the baking dish. -
Season and roast:
Brush the cauliflower all over — even the bottom — with olive oil. Season generously with salt, pepper, and paprika. Roast for 50 minutes, until the garlic is soft and the cauliflower lightly golden. -
Make the garlic purée:
Remove the garlic from the foil. Squeeze the soft cloves into a small bowl and mash with a fork. Mix in a little olive oil, salt, pepper, and paprika. -
Finish with Parmesan:
Brush the puréed garlic mixture over the cauliflower. Sprinkle generously with Parmesan (and breadcrumbs with herbs if you like). Broil or grill for about 50 seconds, just until golden and bubbly — don’t burn the cheese! -
Serve:
Slice into wedges and serve warm. It makes a lovely side dish or even a light vegetarian main course.
