Tasty Gluten Free Pancakes
very soft and fluffy American style pancakes - taste is good - close to the real thing very close but that is a matter of what kind of gluten-free flour blend you use! They keep well I let the dough stand for 4 hours in the fridge and still great to use I also let the pancakes sit and get cold ate a bite of those - wonderful!
Makes 3-4 pancakes
1 cup gluten-free flour mix2 tbsp melted butter, ghee or oil
2 eggs room temperature
1 cup milk ( i use almond milk or oat milk)
1 dash of salt
mix together till well combined, lump-free and smooth. Let sit 10 min.
Prepare pancakes as usual and serve with syrup, fruit, nut butter etc...**Vegan Version
leave out the egg and butter - use oil and nut milk or soymilk and a replacement for 2 eggs
