Ready in minutes with bright herbs and classic flavors.     Mediterranean Mushroom Salad in Broth – Easy & Healthy  Ingredients: 500 g fresh mushrooms, sliced 150 ml vegetable broth 2–3 tbsp olive oil 1–2 tbsp white wine vinegar or lemon juice 1 small onion or 2–3 scallions, finely chopped 1 garlic clove, minced (optional) Salt & pepper 1 pinch oregano or thyme Fresh parsley, chopped Instructions: Bring vegetable broth to a gentle simmer. Add sliced mushrooms and cook for 3–4 minutes until just tender. Drain (reserve 1–2 tbsp warm broth). Whisk olive oil, vinegar, warm broth, salt, pepper, herbs, and garlic.
