this is a recipe out of Nigellas Christmas Cookbook 2008 - I think I have tried almost every recipe out of this book - sadly not blogged :-( Anyway, I have been making this rocky road for years it's not too sweet as you would imagine and I vary with the ingredients - this time I used regular digestive cookies instead of amaretti and almonds instead of brazil nuts. so play with it.. and I sprinkle mine with coconut I strongly recommend drinking strong hot tea with this or a coffee - very nice combo... Enjoy Happy Christmas Alissa CHRISTMAS ROCKY ROADMakes 24 barsMake Ahead Tip: Make Rocky Road and refrigerate to set. Don't ad icing sugar yet, but cut in bars or squares, then store in airtight container in a cool place for up to 1 week. Decorate with icing sugar and edible glitter about 1-2 hours before serving Freeze Ahead Tip: Make the Rocky Road as above and freeze for up to 1 month. Thaw overnight in a cool place. Decorate as mentioned above 250 g dark chocolate
150g milk chocolate
175 g butter, soft 4 x 15 ml tbsp golden syrup or corn syrup 200 g amaretti biscuits (the rock hard ones) or digestive cookies 150 g shelled brazil nuts or almonds 150 g red glacé cherries 125 g marshmallows edible glitter optional Chop both sorts of chocolate small or use chocolate chips or buttons made for melting, and then put into a heavy-base saucepan to melt with the butter and syrup over gentle heat. Put the biscuits into a freezer bag and bash them with a rolling pin to get big and little crumbs; you want some pieces to crunch and some sandy rubble. Put Brazil nuts into another freezer bag and also bash hem so you get different sized nuts. Take the pan off the heat, and add the crushed biscuits and nuts, whole glace cherries and mini marshmallows. Turn carefully to coat everything with chocolate. Tip into a foil-lined tray smoothing the top as best you can, although it will look bumpy. Refrigerate until firm enough to cut which will take about 1 1/2 -2 hours. then take the set block of rocky road and cut. Dust with icing sugar or coconut and edible glitter. Enjoy Liebe Freunde, hier ein Rezept aus meinem Lieblingsweihnachtskochbuch von Nigella Lawson - ich glaube ich habe mittlerweile alle Rezepte daraus gekocht...leider nicht gebloggt habe viele Jahre aus beruflichen Gründen Pause gemacht :-( Hier eines meiner Dauerbrenner Rocky Road - ich liebe diese kleinen süßen Happen - sie sind so einfach hergestellt, ähnlich wie kalter Hund, nicht zu süß und ein so schöner Hingucker auf dem Gebäckteller. Dieses Konfekt ist seit langer Zeit Tradition in Großbritannien in der Weihnachtszeit kann man mittlerweile aber auch in fast allen Cafés als kleine Riegel das ganze Jahr bekommen.
