Quick and Easy - Vegan Korean Vegetable Bowl with Rice and Kasha

how are you doing in this new world and time? Are you taking good care of yourself?

I have started to eating healthy and mindful again the past weeks and feel so much better, my gut is healing and i have a much better sleep - what a change that is.. As many of you know I deal with Hashimoto and did stay away from fermented foods as it caused me bloating etc... but that is actually a fantastic sign that it works and the bad bacteria etc are being kicked out  lol... so here i go after years of missing out finally back to my beloved Korean kitchen

So for this quick meal i used veggies on hand - just sauteed them added a bit gochuchang and some broth ... voila done add some rice, quinoa or any other grain you like.
I made this vegan but this can be done with non vegan soy sauce and you may want to add meat that is up to you

VEGAN KOREAN VEGETABLE BOWL with RICE and KASHA

Serves 2

1 zucchini finely chopped
1 large onion finely chopped
1 bag baby spinach or use frozen leafy spinach
5 large mushrooms sliced
1 cup broad beans chopped
1 cup frozen peas
1 tbsp chopped garlic
1 1/2 Tbsp gochuchang - korean fermented chili paste
2 cups hot vegetable broth
2 tbsp vegan soy sauce
1 tsp honey or agave syrup ( can be omitted)
1 tbsp korean sesame seed oil ( or other sesame seed oil you have on hand - dont omit adds flavor)
1 tbsp vegetable oil of your choosing
2 tbsp tahini sauce 
a dash of toasted sesame seeds

prepare 1 cup of cooked rice or 1/2 cup rice and 1/2 cup  cooked kasha blended - per person

To prepare the veggies - wash them, chop them up and sautee  the onions, garlic, zucchini, the beans in a heavy heated pan with the two oils mixed, till they get soft, add the remaining veggies let them heat up nicely. In a tiny container blend the chili paste with the broth and dissolve the paste. Give it to the pan and make sure to simmer the veggies in the sauce for at least 5 min. Add 1 tbsp of soy sauce and honey.
In a bowl prepare the hot rice and add the veggies, In a seperate tiny jar stir together the tahini and the other half of the soy sauce.. blend well and drizzel pver the veggies and sprinkle with toasted sesame
