St.Patrick's Day is around the corner - let's have some Irish treats - this girl with Irish roots is happy to bring this phenomenal chocolate. What can you expect?
It is a moist cake with a rich flavor of chocolate and a slight hint of the ale... The frosting adds creaminess 
but if you are more looking for a less heavy version just glaze it with chocolate glazing or a simple dusting of icing sugar... This is a cake man love I have made it for my son many times and they also make nice cupcakes and there are so many fun ideas to decorate this cake with marzipan Guinness bottles or a green clover from marzipan... sheep - you get my drift... Enjoy


Nigella's Chocolate Guinness Cake

Cake:
butter for pan
1 c. Guinness
6 tbs. unsalted butter
4 oz. unsweetened baking chocolate (4 squares)
2 c. granulated sugar
3/4 c. sour cream
2 large eggs
1 tsp. vanilla extract
2 c. all-purpose flour
2.5 tsp. baking soda

Frosting:
1.25 c. powdered sugar
8 oz. cream cheese, at room temperature
1/2 c. heavy cream

Heat oven to 350. Butter a 9-inch springform pan.

Cake:

In a large saucepan over medium-low, combine Guinness, butter, and chocolate. Stir and cook very gently until butter and chocolate melt and the mixture is fairly smooth; remove from heat. Whisk in the sugar.

In a small bowl, mix the sour cream, eggs, and vanilla. Whisk this mixture into the Guinness mixture. Add the flour and baking soda and mix again until smooth.

Pour the batter into buttered pan and bake 45 min to an hour, until risen and firm. Place pan on a wire rack and cool completely in pan.

Frosting:

Mix the powdered sugar in a bowl to break up and lumps. Add the cream cheese and mix until fairly smooth. Mix in the cream until it is loose enough to spread easily (but, obviously, not liquid).

I usually unmold the cake and frost it right on the springform base, but it's undoubtedly nicer on a platter if you have that sort of thing. I also slice off the top to make it smooth, since the center often drops a bit after cooling. I save the slices for tasting or, perhaps to mix into ice cream later. As Nigella suggests, frost only the top of the cake (not the sides), to resemble the frothy head on a pint of Guinness (also, it looks chicer). Keeps best in the fridge.

Serves 8-10, probably.

Guinness Schokoladenkuchen



250 ml Bier, Guinness
250 g Butter
75 g Kakaopulver
400 g Zucker
140 ml saure Sahne o. Schmand
2 Ei(er)
1 Pck. Vanillezucker, Bourbon
275 g Mehl
1 TL Natron
300 g Frischkäse
150 g Puderzucker

Bitte den Ofen auf 180° vorheizen und eine Springform (23cm) einfetten und mehlen.

Anschließend geben Sie das Bier in einen großen Topf und fügen die Butter hinzu und lassen sie schmelzen und nehmen den Topf vom Herd. Nun rühren Sie den Kakao und den Zucker unter.

In einer kleinen Schüssel schlagen Sie die saure Sahne und die Eier, Vanille und fügen es zu dem Biermix. Nun rühren Sie langsam das Mehl mit dem Soda unter, bis ein glatter Teig entsteht - nicht zuviel rühren!

Gießen Sie den Teig in die Backform und backen Sie den Kuchen ca. 45 min - 60 min. Komplett in der Form auskühlen lassen - da es ein ziemlich feuchter Kuchen ist!!!

Vorsichtig den Frischkäse schlagen bis er glatt und weich ist und anschließend den Puderzucker unterrühren bis ein glatter, streichfähiger Guss entsteht, nun den Kuchen damit oben drauf locker einstreichen.

Unbedingt im Kühlschrank aufbewahren
