Spicy Nashi Pear Jam


I came across a few recipe nashi pears for next to nothing which made me think of a nice way to preserve them. As I love nashi pears with meat I decided to make a spicy jam that would be also lovely with cheeses - especially hard spicy cheeses!

4 ripe nashi pears, peeled and cut into cubes
6 ripe nectarines, cut into wedges
1 thumb thick piece of fresh ginger, grated
2 cup apple cider (or apple juice)
2 tea bags of chai tea (i used yogi tea "aura"), open the tea bags and dump on fruits
8 cups preserving sugar
1 tbsp citric acid

Put everything in a huge pot and bring to a boil for 10 min till jam starts to thicken. Make a test and see if it's ready by putting a dollop of jam on a saucer - if it builds a skin after a few seconds the jam is ready.
Fill in sterilized jars and seal.

Would be lovely with BBQ chicken, pork chops, meatballs, fish or next to a cheese platter. This also makes a very nice gift!

Würzige Nashi Birnen Marmelade


4 reife Nashi Birnen, geschältund gewürfelt (ca. 600g)
6 reife Nektarinen, in Scheiben geschnitten
1 daumendickes Stück Ingwer, gerieben
2 Tassen Apfelwein oder Apfelsaft
2 Teebeutel Chai Tee (ich habe Yogi Tee "Aura" verwendet)
1 Kilo Gelierzucker 1:1
20 gr Zitronensäure

Alles in einen großen Kochtopf geben (Tee aus dem Tebeutel über die Früchte streuen. Aufkochen und etwas 20 min kochen lassen, dann pürieren, abschäumen und Geliertest machen. Die fertige Marmelade in sterile Gläser füllen und verschliessen. Auf den Kopf drehen und nach 5 Minuten wieder umdrehen.
Schmeckt köstlich zu gegrilltem Fleisch oder Fisch aber auch herrlich zu einer Käseplatte.

    My sisters make jam all the time, and I've been wanting to try making my own. This recipe is really exciting! They'll think I'm crazy, but I'm betting it will be delicious.

  4. hi there... it is a spicy jam try it - i bet you love it.. but its really best with savory things - as bbq chicken and similar..lol
    waving to Vancouver... my sister lives in White Rock! Longing to visit Vancouver is a beautiful place to be!
