Italian Amaretto Bundtcake - Amaretto Gugelhupf




Amaretto Bund Cake

a while back i got a big tin with wonderful Amarettini cookies from Italy - fantastic quality - each one is wrapped in a nice paper seperatly. I wanted to make use of them before they expire and i found this lovely recipe in the chefkoch cooking cummunity. I baked that this afternoon - my kitchen is still filled with a wonderful aroma...hmmm It is a very moist and chocolaty cake with a slight amaretto flavor... lovely fluffy and perfect with a cup of coffee! 100 g bittersweet chocolate, cruched (best quality)
100 g Amarettini cookies
200 g all-purpose flour
2 tsp baking powder
1 tbsp cocoa
1/2 tsp cinnamon
150 g sugar
200 g butter (unsalted), soft
3 large eggs
125 ml espresso (or strong coffee)

Cruch the cookies and the chocolate. Preheat the oven to 170°C. Spray a bundt pan.

In a small bowl sieve together flour, baking powder, cinnamon and cocoa.

Cream the butter, sugar and eggs (one at a time). Then slowly add the flour mix and the spresso by the spoonfulls - make and even batter. Then fold in cruched (or melted) chocolate and the cookie crumbs.

Fill batter in greased bundt pan and bake for 50 min.

Let cool completly and decorate if desired!


Amaretto Gugelhupf

100 g Schokolade, zartbitter
100 g Amarettini
200 g Mehl
2 TL Backpulver
2 EL Kakaopulver
½ TL Zimt
200 g Butter
150 g Zucker
3 Ei(er)
125 ml Kaffee, sehr starker (Espresso)
Fett und Semmelbrösel für die Backform

Die Kuvertüre und die Amarettini klein hacken. Mehl, Backpulver, Zimt und Kakao vermischen. Die weiche Butter mit dem Zucker cremig rühren, bis sich der Zucker gelöst hat. Die Eier einzeln einrühren. Die Mehlmischung zusammen mit dem Espresso portionsweise unterrühren. Die Schokolade und die Keksbrösel unterheben.

Alles in eine gefettete und mit Semmelbröseln ausgestreute Gugelhupfform geben und im vorgeheizten Ofen bei 170°C ca. 50 Minuten backen. Abkühlen lassen und Glasur auftragen!
