GRATIN DAUPHINOIS

4 cups very thinly sliced potatoes
1 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
l clove garlic finely minced
1/4 cup grated gruyere cheese
1/4 cup butter
2 eggs, lightly beaten
l cup heavy cream
2 Tbsp finely grated parmesan cheese
Preheat the oven to 375 degrees.


Sprinkle the potatoes with half the salt, half the pepper , the nutmeg and garlic. Place a layer of potatoes in a shallow greased baking dish - sprinkle with 1/3 of the gruyere and dot with 1/3 of the butter. Continue with two more layers.

Combine the eggs, cream and remaining salt and pepper. Pour over potatoes. Sprinkle with parmesan cheese. Baked covered 30 or 40 minutes or until potatoes are almost tender - uncover and bake until well browned and set.

Yield 4 to 6 servings
